One of the biggest hurdles I found with an rgbmodded nes was capturing it's video output. There wasn't much info related to that so I had to scour the internet and many twitch streams. Fortunately I found Simpoldood's stream which I used as the foundation for my streaming setup.
The basics of it is using a Sony PVM (basically a CRT on steroids) and an upscaler to transcode the rgb signal to something usable for a capture card (rgb->component). The equipment and cables are expensive and not recommended for casual streamers. But wow the quality is amazing. It's borderline emulator quality but on a real console with the instant responsiveness of a CRT.
Thanks to the upscaler, you can also get a scart cable for the snes and genesis to get rgb output from them too. The n64 requires a simple mod but it still uses the same cable as the snes. An rgbmodded AV Famicom also uses this same cable.
