Is it possible to watch a demo from a different perspective than the one it was recorded from? Or to switch the view somehow?

There's no automatic way that I'm aware of. You could set chase_active 1 but it's not a very good alternative.
Sometimes we 'recam' demos to get the effect you are looking for. These recams go into projects such as dimension of the gibbed, run dmc and some of the older qdq movies. However this is really time consuming and extremely boring to do so it's not a thing that happens very often.
