that's basically where I got stuck while planning the 100% run. aside from the different stats to juggle I had to plan the quests in a linear path to try and keep the time down, after a few days my head started spinning.

for the core quests though I'm gonna stick with a basic strat:

main spells are gonna be enflame, multi-arrow, and assassin rush. any other spells I'll get will help, but those are the ones I will definately need

weapons are gonna be wellow's pickhammer and skorm's bow.

multi-arrow+skorm's bow will help me take down the white balverine in one shot along with a few other time consuming fights (second jack fight mainly). wellow's pickhammer isn't the best, but considering how early in the game it can be aquired it'll definately help until I get my stats up.

for the skills I'm mostly gonna be concerned with my speed and magic level, and I'll probably juggle strength and health

assassin rush will be only for movement, after the first level it can be abused to run around pretty quickly, esp at lvls 3 and 4.
I thought it was obvious, which may be why I have not seen posted in the topic yet, but just incase...

The leveling system in this game can be abused greatly, thanks to the Combat Multiplier.  Everyone knows that using physical shield can be used along with enough Mana potions to fill a small ocean (or you know... good playing) in order to never actually be hit for your multiplier to go down.  This means that at the end of the majority of fights end up with a 20* multiplier.

Course this multiplier increases the exp you get from successful melee hit, successful ranged hits, and using spells.  Spells though can be used in or out of battle though.  If you just repeatedly turn your physical shield on and off at the end of a fight while you have this multiplier you can pick up an extra few thousand Will exp.

The multiplier also applies to consumables that give you exp also.  Get a multiplier, assign your 100+ stock of red meat/carrots/fish to one of your hot keys, stuff your face, then go spend your thousands exp at the guild.  (This can also be used with ages of might/will/skill potions you get.)  Last time I played I had a small feast mid way through the arena when I had a 35* combat multiplier.  This made me a tad overpowered

I seem to remember hearing a way to abuse a guard to increase your combat multiplier to silly numbers of 100+, though can not remember the details.

if you don't know this, on the path to bargate prison (or whatever it's called) there's an infinite skeleton spawn on one of the left hand paths that you can easily abuse for huge combos.

I was planning a normal Fable run back in the day, but it's on indefinite hold due to the lack of recording equipment...  probably nothing I can contribute considering how I was going for a bare-bones run, and the glitch(es?) i was going to exploit were fixed by the time this game came around (shovel glitch, namely).

for the most part any major leveling I'm gonna do will probably be limited to the arena, so I'm gonna try and pick up a few ages potions. as for the cliffside path, it is a really good spot to boost (gotten my mult to 268 at one point) but it's also really out of the way to get to it (only after you complete the bargate prison quest do the zombies never stop spawning) and it's extremely time consuming. basically any time that I waste leveling up has to be offset by the time that it saves in order for it to be even halfway worth it, and even then it would have to save more time than it wastes for me to even consider doing it.

as for glitches, unless one allows me to skip objectives or skip core quests then it's probably not worth it. the shovel glitch I don't believe works on the pc anyway, and it's only good to get a quick exp boost.

Boasts.

Fist Fighter.  i.e. No Weapon, No (offensive?) spells.

Then course there are the Quest specific ones such as kill X amount of bandits on the Twinblade mission, or Spare/Slaughter as many people as possible in the arena,  aka Whisper.

And 'No protection' includes physical shield as well as no armor, which is a shame as 'No protection' and 'No damage' do not go hand in hand as well as you would think.
Also, searching all the houses in towns could be a 100% requirement. Also, I think I have a good route for Oakvale and the Heroes Guild.

-Talk to the guy with the barrels
-Leave right after he's done talking (the little boy will interrupt you but w/e)
-Beat up bully
-Take bridge back to Dad and get gold for deeds (I think the bridge is faster)
-Give girl teddy (You can do this after talking to your Dad... you don't need the extra gold piece, you just need to get rid of her green dot)
-Talk to Trader and buy chocolates
-Talk to sister

This will get rid of all the green dots on the maps. You should give the girl the teddy because if you don't she will still be on the map as a green dot. The bully just dissappears. Also, I don't know if this is required for 100% but the cabinets and bookshelves in your house can be searched for some info. You don't get anything though so it probably isn't.

-Get books from Library
-Go outside through the shop and go up stairs in maze's tower to see cutscene and also get the books here!
-Race the apprentice (Maybe pick up that one apple by the rock while racing)
-Do the guild training stuff and pick up the rest of the apples you need outside guild woods (you need 4 total)
-When you are a teenager you start upstairs...now you can raid the upstairs bookshelves! (Might be quick to go down stairs in dorms since your there anyway)
-Do all the guild masters stuff (you can talk to him before he reaches his destination to automatically get there)
-After will training (remember to shoot him with the bow!) tell him you'll play with whisper
-Beat whisper again for katana (only hit once)
-Do archery training (150 points)
-Go in guild woods (you can use bow or magic which ever one you want to level but bow is probably quick if you get headshots)
-Talk to sparrow guy
-Kill one above him and one near servants quarters
-Deliver the apples now!
-Do the will training (12 points I think)
-Kill rest of sparrows (Another one on the roof above him, two on gravestones where you raced the apprentice, and 2 on the roof towards Maze's tower
-Get reward and talk to guildmaster
-Rest is easy no more sidequests just go straight to Maze in the woods

Oh and one other thing, make sure you figure out which shelves have books and which ones don't to save time.

EDIT: Actually I guess you need all the apples for 100%. The other 2 are by the rock with the chest (you can get it when you open it) and behind a tree were you hit dummies with the sword (might as well get it after will training with the guildmaster).
Long time lurker, but there's a very easy way to max out on Stats + Cash

Stat maxing

Play the game normally until you have enough points to start purchasing magical skills. Ignore enflame; it's too expensive points and manawise.
Get Force Push, lowest level will do, and Mana Shield, any level.

Stockpile the meat/fish/carrots as the poster above suggested, and save any and all Ages of Will/Might/Skill (IIRC) potions. They'll give you around 1000 points in each.

Get to the Heroes Guild, stockpile tons of mana potions.

Put on Mana Shield, and use your lowest rank Force Push to start bouncing people around. You can kill EVERY person in the guild without consequence.

Find a good collection of people, bounce them around with Force Push. Watch as Force Push does negligible amounts of damage to each person without killing them, whilst building up your combat multiplier. Kill enough people and infinite guards keep spawning; I like to park myself in the dining hall, corner a bunch of guards up in a corner and bounce them. You'll find that even after the guards are dead, you can keep bouncing them against the wall for a little while and still have your combat multiplier go up. Once it's really, really, REALLY high, consume all your potions + food for a massive boost. This is by far the best way to get 100% skills complete.

Regarding money

Abuse the heck out of gift items, potions, jewels etc. Anything that you can buy in bulk. Once you've amassed enough money, start going to storekeepers, buy all their stock of a specific item, then sell all right back to them. Because of the way the in-game economy works in Fable, items are priced based on rarity. Thus when a storekeeper has 0 of a specific item, they'll buy them for a larger margin than usual. Conversely, when they've got too much of a specific item, they'll price it cheaper than usual. Thus by abusing the buy-all and sell-all functions you can pretty much make tons of money with no effort.

Works best in the early game with health + mana potions, as well as resurrection phials. Once you've got enough cash, start investing in gemstones.

edit: forgot to mention, but make sure you remember to always buy back ALL the items you've sold before you leave the store. This way, every store you get to you'll constantly be picking up more potions and gems, ensuring that you get a better profit margin every time.

Using these two tricks I was able to buy everything in the entire game (I collected every single common and magical weapon in the game, every augmentation that could be bought, etc), and have a fully maxed out character. I imagine you wouldn't have to go quite as crazy with the money trick in a speed run, especially once you calculate how much money you'll need for potions, augs and weapons (eg. the spectacular two-handed sword you get after beating the arena that costs.. 100,000? Can't remember). Plan out the run, figure out how much cash you'll need, abuse the heck out of the economy, and profit (literally!)
For a one hundred percent run, would you really need to do the "quests" that aren't listed? Getting the apples for the apple pie, for example, isn't a quest.  As the Guildmaster points out, it's just a way to make a little pocket money.  Moving on, I can do what I consider to be a 100% (All Silver Keys, open all Silver Key chests, open all Demon Doors, maximum number of documented quests, Fight Club Lvl 4 and all possible legendary weapons) in about three and a half to four hours, single-segment.  The largest factor is usually Skorm's Bow.  I always start as good as possible to try to get it early, since it cuts down on killing time.

Just for reference, I have Enflame Level: 2, Magic Power Level: 3, Speed Level: 5, Accuracy Level: 3, Heath Level: 4, Physique Level: 4, and Toughness Level: 4 before I start the Bandit Seeress quest without speeding any time strictly devoted to leveling.  I also have two Will Master's Elixirs (from Greatwood and the Barrow Field Demon Door) and an Elixir of Life (Orchard Farm).

The route seems sporadic, but there is as little going back and forth as possible. For instance, I don't finish the Sick Child until after I collect Skorm's Bow, so I can avoid the evil points that make it easier to complete the quest but harder to get the bow.

If you need or want any help planning the route, I'd be happy to oblige.  Might find a better way to do my route.
How has the 100% run come along? I'm so new to SDA but I am looking at attempting a 100% run as well!
