I've repeated the segment twice to record for Component and Composite alike.
Also, I've just put these two clips together on a 25/fps sequence in Premiere Pro, synchronising the timer, and didn't find any deviation between the two over the course of the clip. Then again this was only within 30 seconds, I'd have to record at least 10 minutes each to see if the gap might widen over time. I'll post a quality test after this anyway.
afaik component is like the ntsc version of rgb. but unlike with the composite ntsc/pal situation, it is actually very good, maybe even indistinguishable to the human eye from rgb. so i'd say go with whichever is easiest for you.
For every nes-game I have seen, the settings in the attached screenshot have applied. I suggest trying those out first and then post a quality test in this forum section. In case any of the settings would need to be modified, it will be pointed out.

The DF database lists Yoshi's Story as F2, but the gameplay runs at 60 FPS, or F1. (I only tried the Wii Virtual Console version, though I doubt the original would consistently run at a lower frame rate.)
