i see speedrunners with software open sometimes, while practicing, and it gives every little detail you could ever ask for as far as coordinates, controller inputs, angles, etc etc etc lots of numbers. sorry i don't have an example but now i can't find one.

It's not one single program. You have to create one yourself if it doesn't exist for your game. I don't know what the most common techniques are, but something called CheatEngine can at least be used for basic monitoring of memory values.

As for controller inputs, that's likely to be yet another program. Look for "input visualizer" programs.
