I'm afraid I'm not familiar with Rodent's Revenge or Chip's Challenge. I have, however, heard of Pipe Dream, but I question its speedrun value. (Prove me wrong if you have the time.)
Anyway, I actually had a game I was going to suggest in here, but I don't know how well the game 'Castle of the Winds' fits into the category this topic represents.

Flying under the radar is the fact that an Oregon Trail run would be one of the funniest but best ideas in recent memory here. I can imagine the talk already. "Banker is the best." "Keep it on strenuous all the time." "Abuse multiple segments."
Oh and about Minesweeper/Solitaire:
1) There are lots of runs (with videos) already.
2) The times are likely much better than yours or your sister's.
3) You can edit the scores in the registry.
