When I play NTSC games on my PAL console the picture on my TV looks great. But when I plug the composite cable into my capture card the picture on my PC looks fucked up. Is that normal? Or can I fix that somehow?

could be your capture card video settings, check them there's a place that sys NTSC, PAL, SECAM, NTSC-J, etc find one that works
Capture cards usually need to be tuned to the correct video mode manually.
I tried everything, but the video looks still crappy. And even if I turn the settings to NTSC the video is still PAL (even in VDub).
Does it have to do with the original PAL game I'm using for the swap trick to play the NTSC game?
I'm using a Hauppauge WinTV PVR-150 capture card.

Well, I still have a PAL version of the game that I want to run but the NTSC version is slightly faster.

I know of this problem.

You have a old big PS1, right ? I think yes.

The older consoles from the PAL PS1 has a PAL Bios system, but also a NTSC Bios. The problem is that all old big PS1 consoles have the self Bios. You play NTSC games on a old big PS1 PAL, this has a video output of a mixture from PAL resolution and a frame rate from NTSC.
The video capture produce need manuel settings.

I have self a old big PS1 with a MOD-Chip and I have the self problems.

(!) :
Do not use a NTSC 2 PAL converter Disc ! (free region Boot Disc)
All of this discs have many problems with the resolution size of the video and it convert the NTSC to PAL 25fps. (!) This is not accepted for me.

I have not this problems with a PS2 with MOD-Chip.
I do not know of the Bios system from a PSX-Slim ?

I found a way to deinterlace it, so you can actually see something. But the quality is still pretty bad. The colours are too yellow. And the framerate is still 25 fps.

If you're running an NTSC game on a PAL console, wouldn't the output technically be considered PAL-60?

Many newer VCR players sold in Europe can play back NTSC tapes/discs. When operating in this mode most of them do not output a true (625/25) PAL signal but rather a hybrid of PAL and NTSC known as "PAL 60" (or "pseudo PAL") with "60" standing for 60 Hz, instead of 50 Hz. Some video game consoles also output a signal in this mode. Most newer television sets can display such a signal correctly but some will only do so (if at all) in black and white and/or with flickering/foldover at the bottom of the picture, or picture rolling (it can be noted, however, that many analogue-era TV sets can receive the picture by means of adjusting the V-Hold and V-Height knobs — assuming they have them). Very few TV tuner cards or video capture cards will support this mode (a small number can, although software/driver modification is usually required and the manufacturers' specs are usually unclear). A "PAL 60" signal is similar to an NTSC (525/30) signal but with a PAL chrominance subcarrier at 4.43 MHz (instead of 3.58) and with the PAL-specific phase alternation of the red colour difference signal between the lines.

Too bad he can't just record the raw video/audio signals then convert them to a proper video later.

Quick brainstorm: try loading up DScaler and setting it to use Pal 60 (Settings > Advanced Settings > Field Timing Settings) and see if that fixes the video issue.

DScaler is a great program. However, changing the settings to PAL-60 does nothing. I could record only one of the two fields (cause only one of the fields is useful, that's why the picture looks so crappy) but the colors are still messed up (too yellow/green, much too less red). I guess I'll just run the PAL version of this game then.
