Using the program that came with the hardware, WinTV7, or Xsplit (which I'm pretty sure just uses some of the settings from WinTV7 because it matters if I install it as PAL or NTSC) I get this image from my US Genesis with composite cables:

I have no idea what would cause this. Even Virtualdub gives me an "unable to start video capture" error while e.g. my webcam works just fine. When using my Wii in VC mode or my PAL SNES I can't get an image at all so I was fairly optimistic about being able to fix this issue for when I was ready to transition to original console play, but I can't find any information about this on the internet and also I have no idea what the problem might be so I wouldn't know where to start looking either.
Using a splitter I get this image, which is only slightly different in colour strengths, probably due to signal strength but I just included it in case it would help at all:

Twisting the input I can get this kind of image stable in a midway point between fully out and fully in, but I can't replicate it when using the splitter. Since I could get the image before in a position further out too I decided to include this just in case it gives any helpful information:
