LotBlind: Casual Vegan here, so yeah, that's pretty much true in many cases that the meat can be substituted. Sometimes the substitute doesn't work completely, but hey, it's food.

Vegan with a LFHC direction here.  I call it casual since I'm still transitioning into it, with still eating eggs, fish and occasional dessert with milk/butter in it. I will keep following the thread, and if nothing crops up, there is always the added benefit of me enjoying most of the Soy substitutes as cold, which would leave me open to cook these on an off-hour and still taking part in carb and protein rich side-dishes people make Smiley
speaking of veggi food i remember last ESA there was a vegitarian lasanga made at the place that was delicious Smiley

Couldn't estimate cheese, though, because I forgot to buy it. General rule is: There ain't no thing as too much cheese in Kasspatzn anyways xD
Also, I'm probably going to just ask everyone who signs up for the dish if they want it with or without fried onions. I think, one onion per 1–2 people is good. I don't like Kasspatzn with onions though; so I'm a bad person to ask. (Isn't there an Austrian who maybe makes this, reading along, to give me hints on the onion amount? xD)
curseddolls: the lasagne was drsynj's. I won't comment on whether you should make the soup or the other dish but edit your existing post when you've decided, making sure it had all the things I asked for.

Alko: yeah, we can ask further questions in the sign-up form, so that's okay to ask. (about the onions)

Hara: noted your vegan-ness. Will make sure there's a dish that fits that.

Alko: sorry I didn't notice your post (or something like that happened). Okay, we'll go for 16 portions max (1 helper) when people are let to sign up for it.

everyone: you've got one week more or less to finish answering the questions in the quick check list in the first post so I can give people the info when I put up the sign-ups and also so I can see you've thought your dishes through (although looks like most people here are experienced cooks). We'll take an opportunity at the start of the marathon to confirm that you're gonna have all your equipment on site as I don't exactly know yet what's available to us. The volunteering list will have the time slots you can choose for your cookery so you'll know when to go to the shops and when to get started with the cooking.

It's usually served as a main meal at birthday parties and such, usually with coffe/tea or something, and you can decorate the cake with sallad on it aswell, basically anything you can have on a sandwich can go on it.
SlaskPrask: If it's just the cake we'll serve it with coffee and tea in the evening. That's fine.

EVERYONE EVERYONE EVERYONE: Here's the volunteering table. It's missing a few things but I wanted you cooks and helpers to choose days for your cookery. You're all getting one helper (we currently don't have too many spares anyway) except the people with the 3-part meal (icedpingu et al. but I'd appreciate if some of them helped with other cookery instead). Take the earliest day you can starting from the first marathon day.

You must be able to know how many portions your recipes will produce so we'll know how it scales upwards if we get a lot of sign-ups. I think everyone was ready to make at least 16 portions so I'll use that as a default for the sign-ups and if they get filled we can add more slots into each one up till the limit you yourselves gave.
I'm not picky/fuzzy about when I do my dinner as long as its done around 18.00 time. Smiley

Take this into account when choosing a time slot for your cookery. Shopping will take place at 12:00-14:00 or so every day so show up around the kitchen some ten minutes before.

I can make as many as there is ovenwares to use that fits the food.
As I said before one serving gives around 6 big portions for "normal" eaters.
And that is counted WITHOUT use of pasta, I'm sure if a person decide to use
pasta to it the size of the gratine portion would be less.
For myself it could have lasted for a lot more since I don't eat that much. xD

But yeah it all comes down to how many overnwares there exist that is deep enough.
Also if there is a grater on nyeport i much rather grate a piece of cheese then buy one of those
already grated cheese bags.

icedpingu: gave you a time (7th marathon day evening). So wait, the side dish is BOTH potato salad and parsley potatoes? Could you clarify? For amounts: good that you have a "per X people" recipe ready, it'll make it easy to scale it up, but pretty much assume everyone gets the same plate to keep it a bit simpler for yourself. After all people wouldn't sign up for a meal they don't think they'll like... or something along those lines.

Also, could you ask your helpers to just sign up in the meal sign up thread for your meal so they'll be sure to get a portion? I've added it today.

Oh that's why it says that ^^ You can mark it as at least 8 then. I don't know about trusting other people to bring further flour … but I have three kilos, so I could make up to 24 portions if need rea~lly be. I'ld still prefer only having to make up to 16 ^^

Ok, now that I know what's up.

Im signing up as chef on the 31st (thirsday) for the free lunch slot if possible
I will be cooking:

Austrian Goulash

Ingredients:
- Beef ~250g per person
- Onions ~350g per person
- tomato paste
- paprika
- garlic
- spices
- Buns/rolls
- small amount of oil

I know we already have a lot of meat dishes but this is the most austrian dish i could think of that's perfect to make for multiple people. You can just make a giant pot for tons of people or make it for a few.
A thing to notice is, that it should normally cook for 2,5 hours so I hope we can start early enough Smiley

About the dish:
"Wiener Saftgulasch" (google that for pictures) is kinda like a stew. It has a lot of sauce to dunk your buns/rolls and some bigger chunks of meat that are cooked very tender. The sauce is very thick and flavourful, I prefer it spicy with chili but I'm gonna make that optional. The whole dish doesn't have huge amounts of fat but it's a hearty kind of meal that keeps you full for a longer amount of time.

The amounts in my recipe are on the larger side but if there is too much you can always warm it up the next day and a saying says it gets ever better Tongue

That is what I do every time. It tastes just better if you warm it up next day. Fresh Gulasch doesn't taste so good... I think I'll sign up for this XD
HELPERS: Sorry you may have gotten the wrong impression about how to volunteer for this (and tbh it wasn't necessarily thought through to begin with) but could you now please take a look in the volunteering table https://docs.google.com/spreadsheet/ccc?key=0AqVbXOZpnj6MdFRQekxDREMtS19jRDNlb0p4SWsta2c#gid=0 and select one of the ones that says "helper needed". There are several already. Keep looking for more as well when more cooks have selected their cookery times.

Sape: your portion size seems kinda big - 600g from beef and onions already? I think something like 3-4 dl of soup per portion (~400g maybe w/ the water) must be closer to an average meal if we have rolls on the side. So how about 100g-150g of beef, 150g-200g onions? I suppose the other ingredients are present in smaller quantities (paprika)? Yeah, we could do what you suggested and put the rest in the fridge but we don't have too much fridge space so I can't tell if that's going to be possible.

Is it just regular buns from the shop? Also, could you read the checklist now. I need to know how many people can sign up for this meal mainly (i.e. how many portions you're ready to make at most with one person helping you out). Can you start working at 11:30 and can we then set the mealtime at 14:30 or 15:00?

Alko: Sorry I asked someone to look around but apparently they haven't had the time. The wooden board we can just buy I'd imagine. The ham knife: would a fileeing knife do the trick? I unfortunately again do not know. To be on the safe side, could you possibly pack one with you along with the slotted spoon? The rest should be okay.
