Use \ before commas in usernames
So I downloaded some quake speed runs. I extracted it into the quake folder, I go to try and play the demo. When I try and load it, it says "Error, cannot play"

I don't know what I've done wrong. I couldn't get JoeQuake to work for whatever reason. Could that be because I didn't extact it into the Quake folder?

Does me not being able to see demos have to do with the fact that I bought this off from Steam in the id pack? (the one with all the quakes, including the extra missions)

A steam version of quake? It could be that it did things differently than they used to be...

Is there an 'id1' directory? That's where the .dem files should go.
By steam version of quake, I mean that I purchased Quake 1-3 (and the mission packs) on steam. So it's not a CD version of quake.

do I have to make a "demos" folder? or can I just drop the .dem file right in there and be good?

If you could provide more detail on error messages, that'd probably help.

Installing JoeQuake should be as simple as putting the exe file and the joequake directory next to the id1 directory. Your demos can be basically anywhere, but quake will look for demos from the "current game" directory so to speak. By default, the "current game" directory would be the id1 directory. So for simplicity, you could just put the demos there, before you get aquianted with the way the game handles directories etc.

If you get JoeQuake running, it has a built in demo player menu which lets you navigate around the directories and easily play demos from wherever they may be.
