I love YaBB 1G - SP1!

I understand that in order to record a demo its:

Record Demoname Mapname

But doing that only gets demos in Normal difficulty, for me at least. How would I go about getting the demo in the others; easy, hard and nightmare?

You just have to set the skill beforehand in the console:
skill 0 for easy
skill 3 for nightmare
