I've watched a lot of people do it several different ways, but I have a major problem: I don't know where to begin. The obvious answer here would be "Just do what you see in other people's videos", but I always feel like I'm stealing that person's strategy when I do that. I don't know nearly enough about the game to come up with a decent route for myself to take, so I'd have to copy someone else, and that leads me back to the stealing thing.

For instance, the very beginning where you get the rupees for the shield. I know that in general, you get the sword and collect the rupees along the way, but I don't know which order to get what, and I don't want to end up having to watch someone else run it and I have to pause it every ten seconds to see if I can do it too.

I really want to try this game, but I don't know enough about it, and I'd have to copy someone else's strategy to even do good.

If you don't want to feel like you're stealing someones strat, ask them about it. I'm sure that anyone that speedruns the game will be willing to share their knowledge. Or if you don't want to do that, you can check out the thread for the game here on SDA or go to zeldaspeedruns.com to get information.
Practicing small glitches is really helpful.  Before learning routes at all, I'd just devote a few days to figuring out forest escapes, getting ISG on command, bomb hovers, and superslides.  Start playing around with them in new ways and places.  Then once it becomes time to learn routes with/without certain items, you will save yourself a lot of heartache by watching others.  I wouldn't say you're "stealing" a strategy, since all later speedruns are going to be built off discoveries from earlier ones.
Alright, I started practicing, but there's one place I'm really confused at. When I'm in the Deku Tree and I'm supposed to kill Gohma in one cycle, how do I do it? I've heard that you throw a deku nut, jumpslash with a deku stick, and start crouchstabbing, but there's not nearly enough time to do all of that in such a short amount of time.
The order is a little wrong.  Use a nut to stun, hit once, then another nut immediately.  That restarts his stun so there's time to get the last two hits in.  It's easier to get the hang of if you jumpslash with a deku stick before the fight starts, then you only have to think about nut -> crouchstab -> nut -> crouchstab -> crouchstab.
So all the crouchstab is done with the sword then? I thought it was meant to be done with the deku stick.

Deku sticks have double the power of the kokiri blade (making them equal to the master sword), and a jumpslash does double damage, so a deku's jumpslash does 4x a regular kokiri blade attack.

Since crouchstabs carry over damage from the last attack used, you exploit this to kill him in three hits without having to break a single stick.
I just did it in one cycle. I jumpslashed into the fight with the deku stick I had, and put it away before looking up. Threw a deku nut, quickly crouchstabbed, another nut, and a few more stabs. I think I was going too slowly.
Robot Master
To those having trouble with the Gohma one-cycle: Make sure you release the shield button immediately after you do the first crouch stab.  This ensures that you can throw the Deku Nut as fast as possible to get the re-stun.

I'm only posting this because I've had trouble with this up until today, when I recognized that I was holding the shield button for too long.  Now I no longer have to get the Fairy Slingshot in order to defeat Gohma in my RTAs! Cheesy

I'm practicing Any% No RBA/WW using this route: http://zeldaspeedruns.com/oot/routes/any-no-rba-ww and I got through the BoTW pretty consistent. Now I can't get the ZL Cutscene Skip. Any help?
